CNY'13 Dish - Butter Prawns 奶油虾

This is the finger linking food served on the 6th day of Lunar New Year 2013.  with my brother in law and family joining us.  Beside butter prawns, mix vegetables, Hainam Chicken (of course)  Vegetarian Oyster Mushroom in Cereal Crust 香脆麦片鲍鱼菇 and Chinese Herbal  soup were served.    An relishing meal tat enjoy by everyone. 

A dish worth to give it a go...




Ingredients

500 gms large prawns ( cleaned and trimmed )
1/2  bar of butter
1 can of evaporated milk
few stalk of curry leaves
4-5 Chilli padi  (or more if you prefer more spicy) 
oil for frying

Seasoning
Salt, sugar  - to taste
1 tbsp fish sauce
some pepper

Method

Seasoned the prawns with some salt.  Set aside.
Rub the prawns with some cornflour before deep-fry in the hot oil, till  almost cooked. Set aside.
Heat up a wok, melt the butter add in the evaporated milk,  keep stirring till the mixture almost dry up (this take about 20 minutes or so), add in the curry leaves, seasoning and chilli padi.
Lastly add in the fried prawns and mix well and coat the prawns with the butter mixture.  Dish out and serve.
