Nyonya Cincalok Omelet (Hay Ya Kay Nui) 虾酱煎蛋


Cincalok  ~  A typical and popular  Melaka products  made from shrimps. 
Adding  cincalok and kaffir leaves  to simple fried eggs  will definitely enhance the  dish for that extra ordinary taste to tempt everyone to go for more. 



This was prepared 2 days ago, my eldest daughter just love the aroma of the kaffir leaves.

I have made some amendments to the origin recipe.

Ingredients A
3 eggs
3 tbsp oil

Ingredients B
1 No. of sliced fresh chili (or more as desired)
1 tbs cincalok
1/2 tsp finely shredded kaffir lime leaf (Daun Limau Purut)
1/2 tsp pepper
1 big onion (sliced)  -  Optional

Method

  1. Fragrant  big onion with 3 tbsp of oil,  add in the rest of the ingredients B, then add in beaten eggs and using a circular motion spread egg mixture and fry for a while
  2. flip egg mixture over and continue frying till aromatic and lightly brown.
  3. Serve
